Book Synopsis
I have been a chef for over 32 years, this cookbook is a selection of some of my favorite recipes, that I have created over the many years. I came to America from England in 1977 and attended culinary school in New Orleans, LA. I often have culinary students working along side me in my hospital kitchen and this book is the result of one of these students "Randy's" constant persuasion to actual write down the recipes which I was teaching him. Thanks Randy :) This cookbook is dedicated to my mother Barbara Hickson, the woman who first taught me to cook, and gave me her undying love and affection. It is also dedicated to my beautiful wife Kim and my three precious children, Benjamin, Bayli and Blake, because without them I would not be the man I am today. Kim has been the driving force behind my success for over 23 years now and without her love and understanding I would not be able to achieve the success I have enjoyed within the culinary profession.
